Spinach Pie

This recipe is great hot or cold, making it the perfect make-ahead meal for a special occasion brunch like Mother’s Day!

Ingredients

10 ounces frozen, chopped spinach (or bag of fresh spinach, chopped)

1 pound (16 ounces) ricotta cheese

1 egg

1 teaspoon salt

1/2 teaspoon nutmeg

1 cup grated Swiss cheese

1 cup grated parmesan cheese

4 teaspoons of butter or margarine

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Grease an 8-inch or 9-inch pan.
  3. If using fresh spinach, wash, dry, and chip spinach. If using frozen spinach, drain well. Set aside.
  4. In a large bowl mix together the egg and ricotta cheese
  5. Add salt and nutmeg, stir until blended.
  6. Add spinach and cheese to egg mixture. Stir until well mixed.
  7. Pour mixture over a greased quiche or pie pan.
  8. Dot top with the 4 teaspoons of butter to give quiche a beautiful golden-brown top.
  9. Bake at 350 degrees Fahrenheit for 45 minutes.

Notes

This spinach-cheese mixture can be baked in individual muffin tins for a great cold brunch entrée.
