Beet & Flax Hummus

Ingredients

  • 2 small cooked beets
  • 1 15oz can garbanzo beans
  • 2 cloves garlic
  • 1/2 lemon juiced
  • 1/4 cup flaxseed oil
  • 1 1/2 tsp beet powder
  • Salt & Pepper
  • To serve
  • Crushed pistachios
  • Coconut yoghurt

Instructions

  1. Blend cooked beets, drained garbanzo beans, garlic, lemon juice, flaxseed oil, beet powder, salt & pepper
  2. Place humous mix into bowl, add a swirl of natural coconut yoghurt on top and crushed pistachios
  3. Serve with Nairn’s Oat Crackers
